Quickly, while we probably all still have several pounds of kale awaiting consumption, I wanted to share my newest favorite kale salad (adapted from the recipe found on this wonderful food blog. Oh, how I love the internets!).
Fresh Strawberry Vinaigrette
3/4 cup fresh strawberries
3 Tbs olive oil
2 Tbs apple cider or red wine vinegar
1 tsp honey or agave nectar
Pinch of salt and pepper
Pinch of cinnamon
Put everything in your blender or food processor and buzz into smooth.
Kale with Berries and Strawberry Vinaigrette
1 head of curly kale
Berries of your choosing (roughly a cup of each of three berries; I used blueberries, strawberries, and blackberries above. The local blueberries we get from our CSA are so tiny and sweet!)
1 avocado, chopped
2/3 cup toasted chopped almonds
Strip the kale leaves from their stems; tear; and place in a large bowl. Add roughly 1/4 cup of the strawberry vinaigrette (above), and massage it into the kale leaves well. Let the kale sit and soak up the goodness for about 10 minutes
Add your berries and avocado, and additional dressing to suit your taste. Add the chopped almonds; serve.
